Just like a traditional beef porterhouse, these Heritage Pork Porterhouse steaks boast two cuts in one – the strip loin and the tenderloin separated by the iconic “T” shaped bone. Our Heritage Pork Porterhouse comes exclusively from heritage breed hogs, raised without antibiotics or growth stimulants. Cooking
Thaw in refrigerator for at least 24 hours. Remove steaks from the refrigerator 30–40 minutes before cooking to bring to room temperature.
Grill:
- Season steaks as desired; we recommend Kansas City Steak Original Steak Seasoning.
- Preheat grill to medium-high heat and once it is ready sear both sides of the steak for 1–2 minutes.
- Reduce to medium heat and continue to grill in indirect heat to desired doneness. We recommend cooking to Medium-Rare/Medium doneness (approximately 8 to 12 minutes) or until internal temperature reaches 145°F as measured by a thermometer.
- Allow to rest for 5 minutes before serving. The internal temperature of the steaks will continue to rise about 5°F during this time.
Stove Top:
- Season steaks as desired; we recommend Kansas City Steak Original Steak Seasoning.
- Preheat a heavy non-stick skillet over medium heat until hot, for about 5 minutes.
- Place steaks in preheated skillet (do not overcrowd). Do not add oil or water. Do not cover. Cook to desired doneness. We recommend cooking to Medium-Rare/ Medium doneness (approximately 8 to 12 minutes) or until internal temperature reaches 145°F as measured by a thermometer.
- Allow to rest for 5 minutes before serving. The internal temperature of the steaks will continue to rise about 5°F during this time.
Oven:
- Season steaks as desired; we recommend Kansas City Steak Original Steak Seasoning.
- Preheat oven to 350°F.
- Place steaks on foil-lined, raised-edge baking sheet. Bake for approximately 15–20 minutes or until 150°F. As always, when cooking pork, you want a slight pink color.
- Once the steaks have reached 5°F below your desired doneness remove from the oven and allow to rest for 5 minutes before serving.
