Cooking Instructions
Soak beans overnight according to package directions. Place all ingredients except rotel in a stock pot, allow to simmer for 2 1/2 hours, add rotel, allow to simmer 1/2 - 1 hour longer or until meat falls off of ham bone, beans are soft and broth thickens slightly.
Remove ham bone and bay leaf, make corn bread and serve.
If you want a thicker soup, mash some of the beans with a potato masher after total cooking time and prior to serving.
